This course is for apprentices and people who work or want to work in the baking industry. It teaches you off-the-job training component required by the baking industry. You learn how to make a range of breads and yeast goods and how to use equipment and machinery. When you finish the course, and your indenture or trainee apprenticeship, you will be qualified for a Certificate of Proficiency.

Articulation: When you finish the course you can apply for advanced standing in Baking Certificate 4700 or Baking (Pastrycooking) Certificate 4710.


Baking (Pastrycooking)



Qualification: Certificate III (AQF)

This course is for apprentices and people who work in the baking industry. It teaches you the off-the-job training component required by the baking industry. You learn how to make a range of cakes, pastries and yeast goods. You also learn cake decorating and how to use equipment and machinery.

When you finish the course and your indenture or apprenticeship you will be qualified for a Certificate of Proficiency.

Baking – Trade



Qualification: Certificate III (AQF)

This course is for apprentices and people who work in the baking industry. It teaches you the off–the–job training component required by the baking industry. You learn how to make a range of breads, pastries, yeast goods and cakes. You also learn cake decorating and how to use equipment and machinery. You can specialise in bread, pastry, yeast goods, cake or cake decorating by choosing an elective of at least 72 hours.

Career Opportunities: Baker, pastrycook.

When you finish the course and your indenture or trainee apprenticeship, you will qualify you for a Certificate of Proficiency.

Baking – Traineeship



Qualification: Certificate II (AQF)

This course is for trainees and people who work in the baking industry. It teaches you the basic off-the-job training component required by the baking industry for level II. You learn how to make a range of breads, pastries, yeast goods and cakes. You also learn cake decorating and how to use equipment and machinery.

When you finish the course you will get a Certificate II in Baking.

Community Catering



Qualification: TAFE Statement

This course teaches you the practical food skills you need to do catering. You learn how to choose, prepare and present food, as well as maintaining food presentation areas and equipment, health and safety.

Articulation: When you finish this course you can apply for advanced standing in Residential Food and Family Services Certificate III 6637, Dietary Practices Certificate III 6638 and other relevant courses.



Dietary Practices



Qualification: Certificate III (AQF)

This course trains you in the skills and knowledge needed to assist others to make healthy food choices for specific needs and to prepare food for special diets. You also learn to modify menus to suit the needs of people in a range of health care situations.

Career Opportunities: Dietary aid/nutrition assistant in hospitals, nursing homes and community food services.

Articulation: When you finish this course you can apply for the entry into the Dietary Supervision Certificate IV 6639.


Food and Beverage Operations

This short course is for people who want to start work in the food and beverage industry, or for people who want to update or refresh their skills. It teaches you about bar work and wine service, responsible service of alcohol, bistro, function and dining room procedures.

Food Studies (Kitchen Support)



Qualification: Certificate II (AQF)

This course is for people who work in the areas of food preparation in commercial catering, including public/private hospitals, community health organisations, childcare centres, retirement villages, school canteens and restaurants.

You will learn kitchen skills, how to prepare a range of safe and healthy foods and how to work as part of a team in hospitality and community food services. You will also learn how to assess your own skills and apply to have these recognised.

This course provides assessment and learning pathways in line with the national Training Packages for hospitality and community services and health. An elective choice allows you to support food service skills in a range of settings, including food and beverage delivery, cafeteria operations, cleaning and laundry, computer technology and one-to-one job instruction.

Career Opportunities: Cook/food preparer in community services, health and hospitality.

Articulation: You can apply for advanced standing in this course, if you have completed the Year 12 subjects Industry Studies and Hospitality and Food Technology. Hospitality (Catering Operations)

This course is for people who want to be employed as a cook or food preparation assistant in fast food, coffee shop, function catering, restaurant, sandwich shop or hospital/nursing home settings.

You will develop a range of specialised kitchen skills, the preparation of healthy and safe foods, and how to work as part of a team in a hospitality or catering operation. You will also learn about and develop skills in specific methods of cookery.

This course will teach you how to prepare a range of safe and healthy food choices for specific situations, how to organise and produce meals in institutions (such as childcare facilities, nursing homes, hostels), or restaurant kitchens for buffet or a la carte functions or food service operations. You will also learn how to give one-to-one instruction, deal with conflict, and work as part of a team in a hospitality/catering operation.

Work experience will be an opportunity for you to develop your skills in a food service setting, appropriate to your career goals or present work environment.

Career Opportunities: Advanced cook in health and community services area or the hospitality industry specialising in events catering. Manager/chef/cook of a small (one-cook) operation with sole responsibility for food preparation and presentation.

This course is for people who want to develop the skills, knowledge and approach required by a commercial, industrial or retail catering industry operator.

You will learn how to produce quality goods and services in the hospitality and catering industry. You will also learn about organising, preparing and presenting food, planning and controlling menu-based catering, preparing daily meal plans to promote good health, promoting goods and services to customers and maintaining premises.

You will learn about basic methods of cookery and how to implement food safety procedures, providing a link between kitchen and service areas, and developing and updating food and beverage knowledge.

You will also learn about principles associated with developing and marketing menu items, promoting individual business image and planning the concepts of special events and activities. You will develop communication skills for effective customer service, marketing, sales and team development.

This course is for people who work in food preparation areas in commercial catering organisations, including public and private hospitals, community health organisations, childcare centres, retirement villages, school canteens and restaurants.

You will have the opportunity to develop relevant skills in a variety of catering or hospitality operations. This may include fast food outlets, coffee shops, take-away facilities, restaurants, and catering contractors.

You will also learn how to follow health safety and security procedures and workplace hygiene procedures. This course will teach you how to apply practical catering and hospitality principles, such as preparing and presenting food and cleaning and maintaining premises. This course is for apprentices working in Asian/Thai cookery. It is also for people who want to work as an Asian cook specialising in Thai cuisine in a commercial environment.

You will develop and apply skills in the basic methods of Thai cookery with specific emphasis on preparation, cooking and presentation of menu items from Thai cuisine.

This course will be replaced in 2002 following revision of the Hospitality Training Package with which it is currently aligned.

Career Opportunities: Qualified cook in any hospitality establishment specialising in Asian/Thai cuisine.

This course gives you the introductory training to be involved in the care and well being of individuals and families. It provides skills for the cook/carer, nanny/housekeeper, houseparents and home support workers. You can specialise in the care of children, the youth, the aged or people with special needs.

Students in this course may be asked to complete a Student Declaration Form stating that their behaviour does not pose a serious risk to vulnerable people.

This course is for people who want to work in the hospitality accommodation area at a supervisory level.

You will learn front office and housekeeping procedures as well as customer service, financial and clerical skills. You will also learn how to work in a supervisory capacity in a hospitality operation by emphasising teamwork, leadership, staffing issues and operational planning.

You will need to have access to an appropriate workplace or simulated workplace environment during the course. Your campus will help you with this.

Hospitality Basics

This course is for people who want an introduction to the hospitality industry.

You will learn fundamental skills for all studies relevant to the Hospitality industry including customer relations, and basic health, hygiene, safety and security procedures.

Articulation: You may be eligible for credit transfer into equivalent modules in other Hospitality courses.


Hospitality Management



Qualification: Diploma (AQF)
Course No: 4795

You must apply through the TAFE Selection Operations Centre (TSOC) for this course. For more information on applying through TSOC, please contact the TAFE Information Centre on 131 601 (within NSW) or (02) 9299 5011 (outside NSW).

The course teaches you operative through to supervisory and fundamental management skills applied to the hospitality industry, specifically across the sectors of accommodation, food and beverage services, cookery/catering, and club gaming.

You will learn about the tourism and hospitality environment, workplace administration, sales and marketing, supervision, staffing, training and staff organisation. You will learn about law and industrial relations, basic accounting practices, advanced and financial management systems, inventory purchasing, budgeting and control systems, health, safety and security management systems. You will learn about small business hospitality and computer applications, property maintenance and quality management. You will have to do 600 hours of hospitality-related work experience. If you have already worked in the hospitality industry you can apply to the college to have this work experience reduced.

This course is recognised by the Australian Hospitality Review Panel (AHRP).

Career Opportunities: range of supervisory positions in the hospitality
industry.

Articulation: When you finish this course you can apply for entry into the Hospitality Management Advanced Diploma, or a range of hospitality management, commerce or business degree programs offered by some universities, for example, Bachelor of Hotel Management at Griffith University and Bachelor of Commerce at Wollongong University. The campus where you are enrolled can give this information. This course is required to do Hospitality Management Advanced Diploma 4796.
