Australia is a unique tourism destination. It is a very important industry for our country. Tourists inbound or domestic know what they want and have definite expectations of service. To provide the highest level of service, it is essential that all people who work in the Hospitality Industry keep up to date in all areas. Keeping up to date means knowing what’s happening in your area. This might include knowing latest food trends, the changes in management, changes to the Liquor Act, OH&S, your award etc.



A successful Hospitality worker has a sound service knowledge combined with a high level of professionalism which is displayed in all areas of work, it is evident to all people you have contact with.
Are you aware that each year one in twelve worker suffers a work-related injury or illness with enormous cost to the Australian economy? Although hospitality does not appear to be a dangerous industry, all workers in the industry must be aware of hazard management and risk control procedures that are applicable to their specific area. This will minimise the risk of accidents to themselves, their co worker and their customers.

You need to have an understanding of the overall picture of the industry you work in. This allows you see where the industry is headed; it also highlights what you can achieve in your career.


Your Challenge
Develop an up-to-date portfolio. This portfolio will become a very valuable and useful tool through out your hospitality career.
Prepare and present a portfolio to show how you as an employee in the Hospitality industry would keep up to date with the ever-changing work environment.
The portfolio may be presented in any of the following formats - a sectioned folder; a file system; a floppy disk.

Consider the following issues when putting together your Portfolio

What sources of information would you use to keep up to date with happenings in the hospitality industry? Consider a variety methods including, multi media and networking in your answer.
(Include copies of articles, magazines, addresses, web sites etc).

The hospitality industry offers a range of career opportunities, which are described, as either back of house or front of house jobs.

Describe four (4) jobs found in the back of house AND four (4) jobs found in the front of house.
The examples you select should demonstrate the variety of areas found in the hospitality industry.

Describe your career path showing
i) where you started in the industry
ii) where you are currently working
iii) where you will be in the future
You may like to draw a flow chart to show your possible pathway.


Awards and legislation are important aspects of any industry and it is essential for all workers to be aware of the awards and legislation’s that apply to their specific career.
Consider the area you are employed in or would like to be employed in.

i)List both the awards and legislation’s that apply to your sector of the industry.
ii)Include the source of your information.(Try to use a variety of media and networking)

Worksafe Australia is the working title of the National Occupational Health and Safety Commission; their aim is to reduce workplace accidents and injuries.

i) Conduct a Fire Safety inspection of your establishment or school.
During your inspection consider the accessibility of fire extinguisher, fire blankets, fire escapes, fire alarms. Are there any specific instructions for use of fire extinguishers: fire blankets or the fire alarms displayed or is training provided for all staff?
ii) Describe an establishment you work in or your school procedure when dealing with a fire. Consider the following:



Occupational Health and Safety

1.Think about your workplace, what accidents or injuries might occur through poor Occupational Health and Safety practices.

2.What could you do to prevent these accidents or injuries from occurring to you or your work colleagues and customers?
(Consider your responsibilities under the O.H.& S Legislation)

In a practical situation demonstrate the following:

Lifting:
a. Demonstrate the correct steps to lifting that should be used in the workplace to avoid injury.

Sitting:
b. Demonstrate the correct posture that should be used in the workplace when sitting at the computer. Explain the reasons for your choice of posture

Select one of the following situations that could occur in any area of hospitality:

  • Bomb threat
  • Unruly behavior
  • Intoxicated person
  • Armed robbery
  • Under age person
  • Theft
  • Suspicious person
  • Emergency (fire or medical)

  • What is the procedure (in either your establishment or school) for dealing with this type of situation?

    This portfolio will always keep growing as you learn more about the industry. It will a very useful tool for you as you pursue your career in the hospitality industry.
