Activity
You are the catering assistant in a
retail outlet. A client has requested sandwiches for an afternoon tea function.
There will be 50 people attending. All the client’s requirements are
detailed on the
function sheet,
the catering manager has handed you. It contains a list of the sandwiches the
client has selected and other details about the function.
You are required to complete the tasks
outlined below.
- List of ingredients.
Make a list of the ingredients you will need to order to make these
sandwiches.
- Equipment required.
Nominate the large equipment and utensils you will need.
- Workflow plan. Make a
list of the steps you will need to take from slicing the ingredients and
buttering the bread, to the plating and presentation of the sandwiches.
- Time required. How long
will it take you to accomplish the preparation and presentation of the
sandwiches?
You have now completed an example of a workflow plan.
Hint: You may find it helpful to
discuss this with someone who is currently working in a relevant catering
operation. You may find it helpful to draw simple diagrams of your organisation
of mise en place and board work.
