This unit deals with the skills and knowledge required to effectively clean and maintain premises that are used for preparation and/or service of food.

This unit applies to all establishments where food is prepared and served.

Critical Aspects of Assessment

Demonstrate the ability to efficiently and safely clean and sanitise all food preparation and presentation areas including a broad range of large and small equipment.
