Method
Melt first four ingredients over heat. Do
not boil
Add brandy off heat
Add eggs
Add sieved dry
ingredients
Clear mix pour into greased
rings
Lime sauce
Caster sugar 50g
Egg yolks 2
Riesling 100ml
White rum 5ml
Lime: zest & juice
Method
Soften lime zest grated or julienne in a
little syrup.
Produce a sabayon to ribbon
