This unit deals with the skills and
knowledge required to prepare various soups.
Soups can include a range from varying ethnic and cultural origins.
- Identify various classifications of soups including:
- clear
- thickened
- cream
- puree
- miscellaneous
- Prepare appropriate garnishes for a variety of soups
- Prepare soups from self-prepared bases / stocks
- Clarify stock for soup where required
- Use thickening agents to achieve correct consistency
- Follow standard recipes and be able to prepare multiple quantities
- Store soups without compromising quality
- Reconstitute soups where required

Demonstrate the ability to confidently and efficiently prepare and present soups to a level acceptable by the enterprise.
