How much detail needs to be put into the labelling and final drawings?
I'm not sure what you mean by final drawings, however, you will need to present two types of drawings.
In the Visual design development section you will present "appropriately labelled high quality sketches/drawings ... graphic or free ... that ... provide specific information about the design features" (see Assessment criteria in Marking guidelines). So yes, label everything that is appropriate, especially if it relates to the design inspiration.
In the Manufacturing specification section you will present "Production drawings ... that clearly reflect the textile items(s) ... (and) are technical drawings" (see Assessment criteria in Marking guidelines). These are all about views, pattern shapes, scale, proportion, dimensions, etc. They are very straightforward, not stylish at all, not rendered, and are just designed to communicate the intricate detail of your design.
If I am making two similar garments do I have to put in both production processes if they are very similar?
Yes, your technical production plans (including order of construction) should include the details from all items that you present. Perhaps you would be able to list them together, e.g. attach collars to both garments etc.
