Using the Nutrition CD-ROM

cdrom.gifIn the Nutrition strand of the Preliminary Food Technology course you studied food nutrients and diets for optimum nutrition. This information is then applied in the option strand of the HSC course, Contemporary food issues: Nutrition.

This tutorial helps to revise some of that knowledge of basic nutrition and introduces you to a resource developed by TAFE NSW. The Nutrition CD-ROM is a multimedia learning resource and is available from Educational Services Division, telephone: 9780 5784 .

Activity 1

  1. Click on Food nutrients: Tutorial 1

    Click on activity box and complete the nutrition quiz.
    Now complete the following questions: 
    1. What is nutrition? (Answer is on Screen 2, click > button on the bottom of the screen
       Click on the TV screen button to run the video.
    2. Draw a mind map to identify each of the food nutrients: carbohydrate (including fibre), proteins, lipids (fats), vitamins, minerals and water.
      Briefly summarise information about each nutrient in a mind map. A sample mind map is shown below.
      Blue writing is a hot spot, click on this for more information.

  1. Click on the Nutrient ready reckoner for the percentage amount of each nutrient in foods. Select five food examples for each nutrient listed.
  2. Prepare short notes for each nutrient under the headings in the table. An example has been given.
 NUTRIENT  STRUCTURE  FUNCTION  FOOD SOURCES
 Carbohydrates Carbohydrates are classified into two major groups: starch and sugars. Carbohydrates are the most important fuel for the body, providing bulk. Starchy foods, e.g. bread, pasta, rice, vegetables, cereals and pulses. Simple sugars, e.g. confectionery and soft drinks.
 Protein      
 Fats      
 Vitamins      
 Minerals      
 Water      
  1. Click at the bottom of the screen for extra information, for example,
 Starch and sugars (under Carbohydrate)
 Amino acids (under Protein)
 Essential fatty acids (under Fats) Look for the flashing activity button on the screen for fat.
 Classes and megadoses (under Vitamins)
 More on minerals (under Minerals) Look for the Good food/good health video - press on the minerals screen.

Go to screen 12 to check your progress. (This activity requires you to hold down the mouse button and drag icons into correct places).

Activity 2

Digestion, absorption, metabolism and food

From the main menu screen click on:
Science and Chemistry.

Go to Digestion and absorption of nutrients and click on the blue video or film icon. Listen and watch the animation. (Use buttons to stop or go back and forward).

  1. Compile a summary from the animation. Remember to:
    • Define digestion
    • State what happens in the:
      1. amouth
      2. stomach
      3. small intestine
      4. large intestine.
    Go back to the main menu and click on
    Tutorial 2: Diet, energy and digestion.
  1. Go to screen 7 and print out this screen. It is an excellent summary for your study on digestion.
    Click on How food is absorbed (Bottom of screen)
  2. Go to screen 8. This is a diagrammatic summary of the digestion system. Print this too.

Activity 3

Healthy food choices: Tutorial 3

  1. Go to screen 5.
    For specific information on Fibre and the benefits of fibre in our diet. Select Print and keep a copy for your notes.
  2. Go to activity and do the exercise using the fibre meter. Hint: You will need to hold down the mouse button and drag the food across to the meter. It will only stay when in the correct position.
  3. Click on Print for How much fibre do we need?
  4. Go to activity on High fibre menu calculator.

Activity 4

Healthy food choices: Tutorial 3

  1. Go to screen 7
    For specific information on fats and the types of dietary fats select Types of dietary fat.
  2. Click flashing button on Types of fats. Complete the activity.
  3. Look at screen 8 to find out ways to cut down on the amount of fat we eat. (Use the scroll down icon). Make a list from the screen.
  4. Using the information from activity 3 and 4, write a magazine article encouraging adolescents to increase fibre intake and decrease fat intake.
