Comparison of preserved peas

Different forms of food products are available to the consumer to suit different purposes. In your study of the core strand, Food manufacture, you are expected to investigate through experimentation, the suitablity of packaging materials for different food products (Board of Studies, 1999: 21). This experiment evaluates which packaged form best suits individual needs. Comparisons for colour, taste, texture and general quality are personal judgements which may influence consumers' decisions.

Experiment

1. Evaluate the package

You will need:

fresh peas
canned peas
packet of dried peas
packet of frozen peas.

Rate the packages from1 to 4 (with 1 being the best) in a table taking into account visual appeal, clarity of instructions, and the information on the label.

2. Weight versus price

Using the same packets as in activity 1, calculate the cost per gram of peas.

 3. Taste

  1. Prepare each form of peas, noting the time taken for preparation. Follow the instructions on the packet if they are given.
  2. Place each form of peas on a separate plate, labelling each plate separately.
  3. Evaluate each form for colour, flavour and texture. Rate each factor from 1 to 5, five being for most desirable characteristics

4. Nutrition

Using food composition tables or software establish which peas are the most nutritious. Record your results in the table below.

5. Conclusion

  1. Which form of packaging appeared to offer the best product?

  5. Which form of peas offers most to you as a consumer?
  6. Consider each form of peas and suggest situations where each form of preservation is desirable, for example, dried peas are light to carry when bushwalking.
